Lei Garden's Management Philosophy
 
The Lei Garden Restaurant Group has often been nicknamed the Shao Lin Shi (Famous Chinese Monastery where premier Kung Fu Skills are taught) of the Food and Beverage sector. Mr. S.K.Chan has also been respectfully called the "Principal" by veterans in the field. What differentiates Lei Garden from the others is its emphasis on training of the mind.

Putting other's well being in the first place
Mr. Chan's unique management style was a culmination of his entrepreneurial experience, his study of philosophy and history, and last but not the least, his father's family motto of setting noble goals; studying hard; being a good person and doing good deeds. Lei Garden staffs are taught to always put other's well being in the first place. A prime example is in order to safeguard the well being of the customer, a restaurant operator must ensure the freshness of food served; a balanced diet and reasonable pricing. Satisfied customers would bring continued business and thus a considerate operator stands to gain in the end. Individual staff is taught the same virtue of always striving to help others. The catch is in order to be helpful, one must first maintain good health and physique, and be knowledgeable and skilful in your own trade. The helper thus benefited first and foremost from his self improvement.

Pushing one's mental and physical limits
Everybody should make good use of his mental abilities to do objective analysis; differentiate right from wrong, set priorities and definite goals, and continue to improve his intellectual capacities. One should also stretch his physically abilities to commit one self in entirety, deal with problems steadfastly and seriously, attend to finer details and exhaust all possibilities. There is no room for complacency and no excuse for avoiding what is difficult or cumbersome. The belief is when you toil; your mind will be at peace with yourself.

Embracing the correct attitudes to life
Every Lei Garden staff is well conversant with the four pitfalls and four virtues in human nature taught daily by Mr. Chan.

The four pitfalls that we have to watch out and refrain from are selfishness, stubbornness, laziness and pettiness. A selfish person put people in harm's way for his own benefit. A stubborn person rarely wants to improve or seek new knowledge. Laziness is the root of all ills and a lazy person would only sit back and hope to enjoy the fruits of success. Pettiness is being narrow minded, negative, vindictive and loath to criticism.

The four virtues in life that lead to success are determination, confidence, humility and perseverance. Once the goal is set, one needs the determination to charge ahead. Confidence is needed to overcome difficulties and strive for success when one encounters set-backs. Humility is not only to accept but actively pursue criticism in order to get the best results. Perseverance is not to give up under whatever hardship.

Excelling through Innovation
To meet changing time and expectations of customers, the Lei Garden Group has consistently pushed for innovation. Mr.Chan and his chefs and managers made it a rule to have food tasting session every afternoon. The purpose is to maintain standard and make improvements on the existing menu based on customer's feedbacks, and more importantly to demand each chef to create new dishes. Over the last 30 years, more than a thousand new dishes have been perfected that way. The ever so famous XO sauce on the market has indeed been created by Lei Garden in 1981 and the extremely popular Chilled Mango Sweetener with Grape Fruit and Sago in Hong Kong has made its debut in our Singapore Branch back in 1987. In recent years, Lei Garden has been infusing gourmet dishes from all over China and the World into our traditional Cantonese menu and has become one of the pioneers in Fusion Dishes in Hong Kong.
